Chicken and Tomato Rice Recipe

Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil

Instructions:
1. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
2. In the same skillet, add a little more olive oil if needed and sauté the chopped onion and minced garlic until softened.
3. Add the rice to the skillet and stir to coat the rice with the onion and garlic mixture.
4. Pour in the diced tomatoes and chicken broth. Season with paprika, cumin, salt, and pepper. Stir well to combine.
5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
6. Once the rice is cooked, add the cooked chicken back to the skillet and stir to combine.
7. Serve hot and enjoy your delicious chicken and tomato rice dish!
