Make Chicken and Tomato Salad
Chicken and Tomato Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tomatoes, diced
- 2 tablespoons soy sauce
- 1 banana, sliced
- 1 tablespoon chocolate protein powder
- 1/2 cup plain Greek yogurt
- 1 apple, diced
- 4 cups mixed greens
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Avocado oil spray
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 teaspoon Italian seasoning
Instructions:
1. Preheat oven to 375°F.
2. Place chicken breasts on a baking sheet lined with parchment paper.
3. In a small bowl, mix together soy sauce, banana, protein powder, and Greek yogurt.
4. Spread the mixture over the chicken breasts.
5. Bake for 25 minutes, or until chicken is cooked through.
6. In a large bowl, combine tomatoes, apple, mixed greens, balsamic vinegar, olive oil, avocado oil spray, salt, pepper, paprika, thyme, and Italian seasoning.
7. Toss to combine.
8. Slice chicken breasts and add to the salad.
9. Serve and enjoy!
