Chicken and Vegetable Rice

Ingredients:

- 2 cups of uncooked white rice
- 2 tablespoons of olive oil
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 2 cups of mixed vegetables (such as carrots, peas, corn, and green beans)
- 2 cups of chicken broth
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken pieces and cook until they are lightly browned and cooked through, about 5 minutes.

3. Add the onion, bell pepper, and garlic and cook for another 3 minutes.

4. Add the mixed vegetables and cook for another 3 minutes.

5. Add the uncooked rice, chicken broth, and salt and pepper to taste. Stir to combine.

6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed.

7. Serve the chicken and vegetable rice hot. Enjoy!
