Recipe Name: Chicken and Vegetable Rice Pilaf

Ingredients:
- 500g chicken breast, diced
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 stalks of celery, chopped
- 1 cup of rice
- 2 cups of water
- Salt to taste

Instructions:

1. In a large skillet, heat some oil over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set aside.

2. In the same skillet, add a bit more oil if needed and sauté the chopped onion until translucent.

3. Add the diced carrots, potatoes, and celery to the skillet. Cook for about 5 minutes until the vegetables start to soften.

4. Add the rice to the skillet and stir to combine with the vegetables.

5. Return the cooked chicken to the skillet and mix everything together.

6. Pour in the water and season with salt. Bring the mixture to a boil.

7. Reduce the heat to low, cover the skillet with a lid, and let the pilaf simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

8. Once the pilaf is ready, fluff the rice with a fork and serve hot.
