Chicken and Vegetable Sheet Pan Dinner

Ingredients:

-1 lb. boneless, skinless chicken breasts
-1/2 lb. pancetta, diced
-1 lb. potatoes, cut into 1-inch cubes
-1 red onion, cut into wedges
-1 head of broccoli, cut into florets
-8 oz. mushrooms, sliced
-2 cloves garlic, minced
-2 tablespoons olive oil
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine chicken, pancetta, potatoes, red onion, broccoli, mushrooms, garlic, olive oil, salt, and pepper. Toss to combine.

3. Spread mixture onto a large baking sheet.

4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.

5. Serve warm. Enjoy!
