Chicken and Vegetable Stir Fry
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 head of broccoli, cut into florets
- 2 carrots, peeled and sliced
- 1 large tomato, diced
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons honey
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken and cook until lightly browned, about 5 minutes.
3. Add the garlic and cook for 1 minute.
4. Add the broccoli, carrots, tomato, and zucchini and cook for 5 minutes, stirring occasionally.
5. Add the soy sauce and honey and cook for an additional 2 minutes.
6. Season with salt and pepper, to taste.
7. Serve hot. Enjoy!
