Make Chicken and Vegetable Stir-Fry with Rice
Recipe: Chicken and Vegetable Stir-Fry with Rice
Ingredients:
- 2 chicken breasts, boneless and skinless, cut into thin strips
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 tomatoes, diced
- 3 cloves of garlic, minced
- 1 teaspoon salt
- 2 cups cooked rice
- 2 tablespoons vegetable oil
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chicken strips to the skillet and cook until they are no longer pink in the center, about 5-7 minutes. Remove the cooked chicken from the skillet and set aside.
3. In the same skillet, add the sliced onion and bell pepper. Stir-fry for about 3-4 minutes until they start to soften.
4. Add the minced garlic to the skillet and cook for another minute, stirring constantly to prevent burning.
5. Add the diced tomatoes to the skillet and cook for an additional 2 minutes until they are slightly softened.
6. Return the cooked chicken to the skillet and mix well with the vegetables.
7. Sprinkle the salt over the chicken and vegetable mixture, and stir to evenly distribute the seasoning.
8. Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
9. While the chicken and vegetables are simmering, reheat the cooked rice in a separate pot or microwave according to package instructions.
10. Serve the chicken and vegetable stir-fry over a bed of hot cooked rice.
