Chicken and Veggie Quinoa Bowl


-1 cup uncooked quinoa
-1 cup uncooked white rice
-1 green pepper, diced
-1 red pepper, diced
-1 onion, diced
-1 cup broccoli florets
-1 tomato, diced
-1 lb. boneless, skinless chicken breasts, cut into cubes
-2 tablespoons olive oil
-Salt and pepper, to taste


1. Preheat oven to 375°F.

2. In a large bowl, combine quinoa, rice, green pepper, red pepper, onion, broccoli, and tomato. Mix until all ingredients are evenly distributed.

3. Add chicken cubes to the bowl and season with salt and pepper. Drizzle with olive oil and mix until chicken is evenly coated.

4. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring once halfway through.

5. Serve the chicken and veggie quinoa bowl warm. Enjoy!
