Chicken and Veggie Rice Bowl
Ingredients:
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 cup uncooked white rice
- 1 red bell pepper, diced
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1/2 cup corn
- 1 potato, diced
- 1/2 cup uncooked pasta
- 1/2 cup cooked beans
- 1/2 cup green beans
- 1/2 cup asparagus, cut into 1-inch pieces
- 1/2 cup salsa
- 1/2 cup brussel sprouts, cut into quarters
- 1/2 cup diced tomatoes
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine chicken, bell pepper, onion, carrots, celery, corn, potato, pasta, beans, green beans, asparagus, salsa, brussel sprouts, and tomatoes. Season with salt and pepper, to taste.
3. Transfer mixture to a 9x13 baking dish.
4. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
5. Meanwhile, cook rice according to package instructions.
6. Serve chicken and veggie mixture over cooked rice. Enjoy!
