Chicken and Zucchini Pasta Bake

Ingredients:

- 2 medium zucchini, sliced
- 2 boneless, skinless chicken breasts, cut into cubes
- 1/2 cup ricotta cheese
- 2 cups cooked rice
- 8 ounces pasta of your choice
- 1 egg
- 2 potatoes, peeled and diced
- 2 cups shredded lettuce
- 1 cup shredded mozzarella cheese
- 2 tomatoes, diced

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine the zucchini, chicken, ricotta, rice, pasta, egg, potatoes, lettuce, and 1/2 cup of the mozzarella cheese. Mix until all ingredients are evenly distributed.

3. Pour the mixture into a 9x13 inch baking dish.

4. Top with the remaining mozzarella cheese and diced tomatoes.

5. Bake in preheated oven for 30 minutes, or until the cheese is melted and bubbly.

6. Serve hot. Enjoy!
