Chicken and Zucchini Ricotta Pasta
Ingredients:
-1 lb. of pasta of your choice
-1 lb. of chicken breast, cubed
-1 large zucchini, diced
-1/2 cup of ricotta cheese
-1/2 cup of grated cheese
-2 cloves of garlic, minced
-2 tablespoons of olive oil
-Salt and pepper, to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
3. Add the garlic and zucchini and cook until the zucchini is tender, about 5 minutes.
4. Drain the pasta and add it to the skillet with the chicken and zucchini.
5. Add the ricotta cheese and grated cheese and stir to combine.
6. Season with salt and pepper, to taste.
7. Serve the pasta warm. Enjoy!
