Chicken Avocado Rice Bowl

Ingredients:

- 2 boneless chicken breasts
- 2 avocados, diced
- 2 cups cooked white rice
- Juice of 1 lemon
- 2 slices of bread
- 2 cups of salad greens
- 2 eggs

Instructions:

1. Preheat the oven to 350°F.

2. Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through.

3. Meanwhile, cook the rice according to package instructions.

4. Toast the bread slices in a toaster or in a skillet over medium heat.

5. In a large bowl, combine the cooked rice, diced avocado, salad greens, and lemon juice.

6. Once the chicken is cooked, slice it into thin strips and add it to the bowl.

7. Fry the eggs in a skillet over medium heat until cooked to your preference.

8. To serve, divide the rice bowl between two plates and top each with a fried egg. Serve with the toasted bread slices. Enjoy!
