Chicken Avocado Tomato Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 avocados, diced
- 2 tomatoes, diced
- 1/2 red onion, diced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 350°F.
2. Place chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through.
3. Meanwhile, in a large bowl, combine the diced avocados, tomatoes, and red onion.
4. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper.
5. Once the chicken is cooked, let cool for a few minutes before dicing.
6. Add the diced chicken to the bowl with the avocado, tomato, and onion.
7. Pour the dressing over the salad and toss to combine.
8. Serve immediately. Enjoy!
