Chicken Avocado Tomato Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 large avocado, diced
- 1 large tomato, diced
- 1/4 cup red onion, diced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts on a baking sheet and season with garlic powder, salt, and pepper. Bake for 25 minutes or until chicken is cooked through.
3. In a large bowl, combine diced avocado, tomato, and red onion.
4. In a small bowl, whisk together olive oil and red wine vinegar.
5. Once chicken is cooked, let cool for 5 minutes, then dice into small cubes.
6. Add chicken to the bowl with the avocado, tomato, and red onion.
7. Pour the olive oil and red wine vinegar mixture over the salad and toss to combine.
8. Serve and enjoy!
