Chicken Bacon Rigatoni with Apple and Avocado
Ingredients:
- 2 chicken breasts, cut into cubes
- 2 slices of bacon, cut into small pieces
- 1 large apple, diced
- 1/2 teaspoon of freshly ground black pepper
- 1/2 teaspoon of salt
- 2 tablespoons of olive oil
- 1/2 cup of parmesan cheese, grated
- 1 avocado, diced
- 8 ounces of rigatoni pasta
Instructions:
1. Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bacon and cook until it starts to crisp, about 5 minutes.
3. Add the chicken and season with salt and pepper. Cook until the chicken is cooked through, about 8 minutes.
4. Add the apple and cook for another 2 minutes.
5. Drain the rigatoni and add it to the skillet. Toss to combine.
6. Add the avocado and parmesan cheese and toss to combine.
7. Serve the Chicken Bacon Rigatoni with Apple and Avocado warm. Enjoy!
