Recipe: Chicken Biryani
Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 2 tablespoons biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon ginger-garlic paste
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Salt to taste
- Ghee or oil
Step by Step Guide:
1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
2. In a large pot, heat some ghee or oil. Add the sliced onions and sauté until golden brown.
3. Add the chicken pieces and cook until they are no longer pink.
4. Add the chopped tomatoes, biryani masala, turmeric powder, red chili powder, ginger-garlic paste, salt, yogurt, coriander leaves, and mint leaves. Mix well and cook for a few minutes.
5. Add the soaked rice to the pot and mix gently to combine with the chicken and spices.
6. Pour in enough water to cover the rice and chicken mixture. Bring to a boil.
7. Reduce the heat to low, cover the pot with a tight-fitting lid, and let the biryani simmer for about 20-25 minutes or until the rice is cooked and the chicken is tender.
8. Once done, fluff the biryani with a fork and serve hot with raita or salad.
