Chicken Bulgur Bowl
Ingredients:
- 1 cup bulgur
- 2 cups chicken broth
- 2 boneless, skinless chicken breasts
- 1 red pepper, diced
- 1 cup frozen corn
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions:
1. In a medium saucepan, bring the chicken broth to a boil.
2. Add the bulgur and stir. Reduce the heat to low and cover the pan. Simmer for 15 minutes, or until the bulgur is tender.
3. Meanwhile, heat the olive oil in a large skillet over medium-high heat.
4. Add the chicken breasts and season with salt and pepper. Cook for 8-10 minutes, or until the chicken is cooked through.
5. Once the bulgur is cooked, add the red pepper and corn to the skillet with the chicken. Cook for an additional 5 minutes, or until the vegetables are tender.
6. Divide the bulgur between two bowls and top with the chicken and vegetables. Serve warm. Enjoy!
