Chicken Curry
Ingredients:
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 2 cups chicken broth
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup plain yogurt
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
1. Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
2. Add curry powder, cumin, coriander, ginger, turmeric, cinnamon, and cayenne pepper. Cook for 1 minute, stirring constantly.
3. Add diced tomatoes and chicken broth and bring to a boil.
4. Add chicken cubes and reduce heat to low. Simmer for 10 minutes, or until chicken is cooked through.
5. Stir in yogurt and cilantro. Season with salt and pepper to taste.
6. Serve over cooked rice or with naan bread. Enjoy!
