Chicken Curry Burrito

Ingredients:

- 2 tablespoons of oil
- 1 clove of garlic, minced
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of curry powder
- 1/2 cup of uncooked rice
- 1 cup of water
- 1/2 cup of tomato sauce
- 1 cup of cooked, shredded chicken
- 4 large flour tortillas

Instructions:

1. Heat the oil in a large skillet over medium heat.

2. Add the garlic, salt, pepper, and curry powder and cook for 1 minute.

3. Add the rice and cook for 2 minutes, stirring occasionally.

4. Add the water, tomato sauce, and chicken and bring to a boil.

5. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

6. Remove from the heat and let cool.

7. Preheat the oven to 350 degrees F.

8. Place the tortillas on a baking sheet.

9. Divide the chicken curry mixture among the tortillas.

10. Roll up the tortillas and secure with toothpicks.

11. Bake for 15 minutes or until the tortillas are lightly browned.

12. Serve warm. Enjoy!
