Make Chicken Curry with Rice

Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup rice
- 2 cups mixed vegetables (such as bell peppers, carrots, and peas)
- 1 can coconut milk
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- Salt and pepper to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions:
1. In a large skillet, heat oil over medium heat. Add chopped onion, garlic, and ginger. Cook until fragrant, about 2-3 minutes.
2. Add the chicken pieces to the skillet and cook until browned on all sides.
3. Stir in the curry powder and cook for another minute.
4. Pour in the coconut milk and bring to a simmer. Let it cook for 10 minutes.
5. Add the mixed vegetables to the skillet and cook until they are tender.
6. In a separate pot, cook the rice according to package instructions.
7. Season the curry with salt and pepper to taste.
8. Serve the chicken curry over the cooked rice.
9. Garnish with fresh cilantro before serving.
