Chicken Fajita Quesadillas

Ingredients:

- 2 chicken breasts
- 1/2 onion, diced
- 1/2 jalapeño, diced
- 2 cloves garlic, minced
- 2 cups spinach, chopped
- 2 tablespoons olive oil
- 4 large tortillas
- 1 cup shredded cheese
- 1/2 cup plain Greek yogurt

Instructions:

1. Preheat oven to 375°F.

2. Heat olive oil in a large skillet over medium heat. Add the onion, jalapeño, garlic, and chicken and cook until chicken is cooked through, about 8 minutes.

3. Add the spinach and cook until wilted, about 3 minutes.

4. Remove from heat and set aside.

5. Lay two tortillas on a baking sheet. Top each with half of the chicken mixture, cheese, and Greek yogurt.

6. Top with the remaining two tortillas and press down lightly.

7. Bake for 10 minutes, or until cheese is melted and tortillas are golden brown.

8. Cut into wedges and serve. Enjoy!
