Recipe Name: Chicken Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 2 scallions, chopped
- 2 tbsp peanut oil
- 1 carrot, diced
- 1 onion, diced
- 2 tbsp soy sauce
- 1/2 cup peas
Instructions:
1. Heat 1 tbsp of peanut oil in a large skillet or wok over medium-high heat.
2. Add the diced chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the remaining 1 tbsp of peanut oil.
4. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside with the cooked chicken.
5. Add the diced carrots and onions to the skillet and cook until they start to soften.
6. Add the cooked rice to the skillet and stir to combine with the vegetables.
7. Pour the soy sauce over the rice and vegetables, and stir to evenly coat.
8. Add the cooked chicken, scrambled eggs, chopped scallions, and peas to the skillet. Stir well to combine all the ingredients.
9. Cook for another 2-3 minutes, stirring frequently, until everything is heated through.
10. Taste and adjust seasoning if needed.
