Chicken Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts, cut into small cubes
- 2 eggs
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 teaspoon salt
- 2 tablespoons olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the chicken cubes and cook until golden brown and cooked through, about 5 minutes.

3. Add the onion, bell pepper, garlic, and tomato and cook for an additional 5 minutes, stirring occasionally.

4. Push the vegetables to the side of the skillet and add the eggs. Scramble the eggs until cooked through.

5. Add the cooked rice to the skillet and stir to combine.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
