Chicken Fried Rice
Ingredients:
- 2 cups cooked white rice
- 2 cups cooked, diced chicken
- 2 eggs, beaten
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, bell pepper, and garlic and cook until the vegetables are softened, about 5 minutes.
3. Add the chicken and cook until it is heated through, about 5 minutes.
4. Add the cooked rice and stir to combine.
5. Push the mixture to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are cooked through, about 2 minutes.
6. Add the tomato and parsley and stir to combine.
7. Add the cheese and stir until it is melted.
8. Season with salt and pepper, to taste.
9. Serve hot. Enjoy!
