Recipe Name: Chicken Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1 onion, chopped
- 1 tomato, diced
- Handful of fresh coriander, chopped
- 2 tablespoons oil
Instructions:
1. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
2. Add the diced chicken breast and cook until browned and cooked through. Remove from the pan and set aside.
3. In the same pan, add the remaining tablespoon of oil. Add the chopped onion and sauté until translucent.
4. Push the onions to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked, then mix them with the onions.
5. Add the cooked rice to the pan and stir well to combine with the eggs and onions.
6. Add the diced tomato, cooked chicken, salt, and chopped coriander to the pan. Stir everything together and cook for another 2-3 minutes until heated through.
7. Taste and adjust seasoning if needed.
8. Serve hot and enjoy your delicious Chicken Fried Rice!
