**Recipe: Chicken Fried Rice**

**Ingredients:**
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup mixed vegetables (carrots, peas, corn)
- Salt and pepper to taste
- Optional: green onions for garnish

**Instructions:**
1. In a large skillet or wok, heat vegetable oil over medium-high heat.
2. Add diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
4. Add the mixed vegetables to the skillet and cook until they are heated through.
5. Add the cooked rice to the skillet and stir to combine with the chicken, eggs, and vegetables.
6. Pour soy sauce over the mixture and stir well to evenly distribute.
7. Season with salt and pepper to taste.
8. Continue to cook for another 2-3 minutes, stirring frequently.
9. Remove from heat and garnish with chopped green onions if desired.
10. Serve hot and enjoy your delicious chicken fried rice!
