Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1 bell pepper, diced
- Salt to taste
- Pepper to taste
- 1 tomato, diced
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons oil
Instructions:
1. Heat oil in a large pan or wok over medium-high heat.
2. Add diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked.
4. Add diced bell pepper, minced garlic, and chopped onion to the pan. Cook until vegetables are tender.
5. Stir in the cooked rice and diced tomato. Mix well.
6. Season with salt and pepper to taste. Stir everything together and cook for another 2-3 minutes.
