Chicken Fried Rice
Ingredients:
- 4 slices of toast bread, cubed
- 2 eggs
- 1 onion, diced
- 2 potatoes, diced
- 2 carrots, diced
- 2 cups of cooked rice
- 2 tablespoons of butter
- 1 cup of cooked chicken, diced
- 2 tomatoes, diced
- 1/2 cup of milk
- 1 teaspoon of baking powder
- Salt and pepper to taste
- 1/2 cup of sweet corn
- 1/2 cup of okra, sliced
Instructions:
1. In a large skillet, heat the butter over medium-high heat.
2. Add the onions, potatoes, carrots, and okra. Cook for 5 minutes, stirring occasionally.
3. Add the cubed toast bread and cook for another 3 minutes.
4. Add the eggs and scramble until cooked through.
5. Add the cooked rice, chicken, tomatoes, milk, baking powder, salt, and pepper. Stir to combine.
6. Add the sweet corn and cook for another 5 minutes, stirring occasionally.
7. Taste and adjust seasoning if needed.
8. Serve hot. Enjoy!
