Ingredients:
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1 tomato, diced
- 1 teaspoon salt
- 2 cloves garlic, minced
- 2 eggs, beaten
Instructions:
1. Heat a large skillet or wok over medium heat.
2. Add a little oil to the skillet and sauté the minced garlic until fragrant.
3. Add the diced tomato and cook until softened.
4. Push the tomato to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
5. Add the diced chicken to the skillet and stir to combine with the tomato and eggs.
6. Add the cooked rice to the skillet and stir well to combine with the other ingredients.
7. Season the fried rice with salt and continue to stir-fry for a few more minutes until everything is heated through.
