- 2 cups cooked rice
- 2 chicken breasts, boneless and skinless, cut into small pieces
- 2 eggs, beaten
- 1 medium onion, finely chopped
- 1 zucchini, diced
- 1 teaspoon salt
- 2 tablespoons vegetable oil

Step-by-Step Guide:

1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

2. Add the chicken breast pieces to the skillet and cook until they are no longer pink in the center, stirring occasionally. This should take about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.

3. In the same skillet, add the remaining tablespoon of vegetable oil and heat it up.

4. Add the chopped onion and diced zucchini to the skillet. Sauté them for about 3-4 minutes until they become tender and slightly golden.
