Garlic Chicken and Rice
Ingredients:
- 2 cups of uncooked white rice
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 pound of boneless, skinless chicken breasts, cut into cubes
- 2 cups of chicken broth
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and chicken cubes and cook until the chicken is cooked through, about 8 minutes.
3. Add the chicken broth and bring to a boil.
4. Add the rice and stir to combine.
5. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
6. Season with salt and pepper to taste.
7. Serve the garlic chicken and rice warm. Enjoy!
