Chicken Lentil Stew
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 zucchinis, diced
- 2 cups shredded cabbage
- 2 cups diced tomatoes
- 1/2 cup cream cheese
- 1 cup cooked lentils
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the chicken and cook until lightly browned, about 5 minutes.
4. Add the zucchini, cabbage, tomatoes, cream cheese, and lentils and stir to combine.
5. Add the oregano, basil, salt, and pepper and stir to combine.
6. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
7. Serve hot. Enjoy!
