Chicken Mole
Ingredients:
-2 tablespoons olive oil
-2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
-1 onion, diced
-2 cloves garlic, minced
-2 tablespoons chili powder
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1/2 teaspoon ground cinnamon
-1/4 teaspoon ground cloves
-1/4 teaspoon cayenne pepper
-1/4 teaspoon ground black pepper
-1/2 teaspoon salt
-1 (14.5 ounce) can diced tomatoes
-1/2 cup chicken broth
-1/4 cup creamy peanut butter
-1/4 cup raisins
-1/4 cup sliced almonds
-1/4 cup chopped fresh cilantro
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
4. Add the chili powder, cumin, coriander, cinnamon, cloves, cayenne pepper, black pepper, and salt. Stir to combine.
5. Add the diced tomatoes, chicken broth, peanut butter, raisins, and almonds. Stir to combine.
6. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
7. Add the cilantro and stir to combine.
8. Serve over cooked rice or with warm tortillas. Enjoy!
