Recipe Name: Chicken Mushroom Skillet

Ingredients:
- 2 boneless, skinless chicken breasts
- 8 ounces mushrooms, sliced
- 2 tomatoes, diced
- 1 onion, thinly sliced
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:

1. Heat olive oil in a large skillet over medium heat.

2. Season the chicken breasts with salt and pepper on both sides.

3. Place the chicken breasts in the skillet and cook for about 5-6 minutes on each side, or until they are cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the sliced onions and minced garlic. Sauté for about 2-3 minutes, or until the onions are translucent and fragrant.

5. Add the sliced mushrooms to the skillet and cook for another 4-5 minutes, or until they are tender and slightly browned.

6. Stir in the diced tomatoes and cook for an additional 2 minutes, allowing the flavors to meld together.

7. Return the cooked chicken breasts to the skillet, nestling them among the mushroom and tomato mixture. Cook for another 2-3 minutes, until the chicken is heated through.

8. Serve the chicken mushroom skillet hot, garnished with fresh herbs if desired. It pairs well with rice, pasta, or a side of steamed vegetables.
