Chicken Parmesan Pasta
Ingredients:
-1 lb boneless, skinless chicken breasts
-1 cup uncooked white rice
-2 eggs, lightly beaten
-1 cup shredded cheese
-1 onion, diced
-1 bell pepper, diced
-2 cloves garlic, minced
-1 lb pasta
-1/4 cup olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large pot, bring water to a boil and cook pasta according to package instructions. Drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add chicken, onion, bell pepper, and garlic. Cook until chicken is cooked through, about 8 minutes.
4. In a separate bowl, combine eggs and cheese.
5. Grease a 9x13 baking dish. Place cooked pasta in the bottom of the dish. Top with chicken mixture. Pour egg and cheese mixture over the top.
6. Bake for 25 minutes.
7. Meanwhile, cook rice according to package instructions.
8. Serve chicken Parmesan pasta with cooked rice. Enjoy!
