Chicken Parmesan Pasta
Ingredients:
-2 boneless, skinless chicken breasts
-2 eggs, beaten
-1/2 cup grated Parmesan cheese
-1/2 cup bread crumbs
-1/2 teaspoon garlic powder
-1/2 teaspoon Italian seasoning
-1/4 teaspoon salt
-1/4 teaspoon pepper
-1 tablespoon olive oil
-1 cup diced tomatoes
-1/2 teaspoon dried oregano
-1/2 teaspoon dried basil
-1/4 teaspoon red pepper flakes
-1/4 cup white wine
-1/2 pound cooked pasta
Instructions:
1. Preheat oven to 375 degrees F.
2. In a shallow bowl, combine the Parmesan cheese, bread crumbs, garlic powder, Italian seasoning, salt, and pepper.
3. Dip the chicken breasts in the beaten eggs, then coat with the Parmesan cheese mixture.
4. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes per side, or until golden brown.
5. Transfer the chicken to a plate and set aside.
6. Add the diced tomatoes, oregano, basil, red pepper flakes, and white wine to the skillet. Simmer for about 5 minutes.
7. Return the chicken to the skillet and top with the cooked pasta.
8. Sprinkle the remaining Parmesan cheese over the top.
9. Bake in the preheated oven for about 20 minutes, or until the chicken is cooked through.
10. Serve and enjoy!
