Chicken Parmesan Pasta
Ingredients:
- 2 cups cooked rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 eggs, beaten
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup uncooked pasta
- 1 teaspoon salt
- 1 tomato, diced
- 2 cloves garlic, minced
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat a large skillet over medium heat. Add the chicken and cook until golden brown, about 5 minutes.
3. In a medium bowl, combine the eggs, cheese, onion, bell pepper, and salt.
4. Grease a 9x13-inch baking dish with cooking spray. Spread the cooked rice in the bottom of the dish.
5. Top the rice with the cooked chicken, then pour the egg mixture over the top.
6. Bake in preheated oven for 25 minutes.
7. Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside.
8. In a small skillet, heat the tomato, garlic, and a pinch of salt over medium heat. Cook until the tomato is softened, about 5 minutes.
9. To assemble the dish, combine the cooked pasta, tomato mixture, and chicken parmesan mixture in a large bowl.
10. Serve warm. Enjoy!
