Chicken Parmesan with Roasted Bell Peppers and Onions

Ingredients:

- 2 large onions, diced
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine onions, bell peppers, garlic, and olive oil. Toss to combine.

3. Spread the mixture onto a baking sheet and bake for 15 minutes.

4. Meanwhile, season the chicken cubes with salt and pepper.

5. Add the chicken cubes to the baking sheet with the vegetables and bake for an additional 15 minutes.

6. Sprinkle the parmesan cheese over the chicken and vegetables and bake for an additional 5 minutes, or until the cheese is melted and the chicken is cooked through.

7. Serve hot. Enjoy!
