Chicken Pepper Tomato Stir-Fry
Ingredients:
-1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
-1 red bell pepper, cut into 1-inch cubes
-1 yellow bell pepper, cut into 1-inch cubes
-1 large tomato, diced
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 teaspoon dried oregano
-1 teaspoon dried basil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the bell peppers and garlic and cook for another 3 minutes.
4. Add the tomato, oregano, basil, salt, and pepper and cook for another 2 minutes.
5. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
6. Serve hot over cooked rice or pasta. Enjoy!
