Make Chicken Pesto Zoodles

Recipe: Chicken Pesto Zoodles

Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 large zucchinis, spiralized into zoodles
- 1/2 cup pesto sauce
- Grated Parmesan cheese for garnish
- Fresh basil leaves for garnish

Instructions:
1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
3. Add the chicken breasts to the skillet and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing into strips.
4. In the same skillet, add the remaining tablespoon of olive oil and sauté the zoodles for 2-3 minutes, or until they are tender but still slightly crisp.
5. Add the pesto sauce to the skillet with the zoodles and toss to coat evenly.
6. Add the sliced chicken back to the skillet and stir to combine with the zoodles and pesto sauce.
7. Cook for an additional 2-3 minutes, or until everything is heated through.
8. Serve the Chicken Pesto Zoodles hot, garnished with grated Parmesan cheese and fresh basil leaves.
