Chicken Quinoa Bowl
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 cup uncooked quinoa
- 1 red pepper, diced
- 1 green pepper, diced
- 2 cups shredded lettuce
- 1/4 cup granola
- 2 tablespoons dark chocolate chips
- 2 tablespoons sugar
- 2 tablespoons all-purpose flour
Instructions:
1. Preheat oven to 375°F.
2. Place chicken breasts on a baking sheet and season with salt and pepper. Bake for 20 minutes or until cooked through.
3. Meanwhile, cook the rice and quinoa according to package instructions.
4. In a large bowl, combine the cooked rice and quinoa with the diced peppers, lettuce, granola, chocolate chips, sugar, and flour.
5. Once the chicken is cooked, dice it into small pieces and add it to the bowl.
6. Mix everything together until evenly combined.
7. Serve the chicken quinoa bowl warm or cold. Enjoy!
