Chicken Scarpariello


-4 boneless, skinless chicken breasts
-1/4 cup olive oil
-1/4 cup white wine
-1/4 cup chicken broth
-1/4 cup freshly squeezed lemon juice
-2 cloves garlic, minced
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/2 teaspoon red pepper flakes
-1/2 teaspoon salt
-1/4 teaspoon freshly ground black pepper
-1/2 cup sliced mushrooms
-1/2 cup sliced bell peppers
-1/2 cup sliced onions
-1/4 cup sliced olives
-1/4 cup capers


1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add chicken breasts and cook for 5 minutes per side, or until golden brown.

4. In a small bowl, whisk together white wine, chicken broth, lemon juice, garlic, oregano, basil, red pepper flakes, salt, and pepper.

5. Pour mixture over chicken breasts and add mushrooms, bell peppers, onions, olives, and capers.

6. Bring to a boil, reduce heat to low, and simmer for 10 minutes.

7. Transfer skillet to preheated oven and bake for 15 minutes, or until chicken is cooked through.

8. Serve chicken scarpariello with cooked pasta or rice. Enjoy!
