Chicken Shank and Heart Stew
Ingredients:
- 2 chicken shanks
- 2 chicken hearts
- 2 potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the chicken shanks and hearts and cook until lightly browned, about 5 minutes.
3. Add the potatoes, onion, and garlic and cook for an additional 5 minutes.
4. Pour in the chicken broth and season with oregano, thyme, salt, and pepper.
5. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
6. Taste and adjust the seasoning if necessary.
7. Serve hot with crusty bread. Enjoy!
