Chicken Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 6 cups chicken broth
- 2 cups cooked, shredded chicken
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
3. Add the thyme and cook for another minute.
4. Pour in the chicken broth and bring to a boil.
5. Reduce the heat to low and simmer for 10 minutes.
6. Add the chicken and simmer for another 5 minutes.
7. Stir in the parsley and season with salt and pepper to taste.
8. Serve hot. Enjoy!
