Chicken Taco Bowls

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 potatoes, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 tortillas
- 1 tomato, diced

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine chicken, potatoes, onion, garlic, taco seasoning, olive oil, salt and pepper. Mix until everything is evenly coated.

3. Spread the mixture onto a baking sheet. Bake in preheated oven for 25 minutes, or until chicken is cooked through and potatoes are tender.

4. Meanwhile, warm the tortillas in a skillet over medium heat.

5. Once chicken and potatoes are cooked, assemble the taco bowls. Place a tortilla in each bowl, then top with chicken and potato mixture. Sprinkle with diced tomatoes.

6. Serve immediately. Enjoy!
