Make Chickpea and Maize Tortilla Wraps
Chickpea and Maize Tortilla Wraps
Ingredients:
- 4 tortilla wraps
- 1 can of chickpeas, drained and rinsed
- 1 cup of cooked maize
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of ground pepper
- 2 tablespoons of chopped parsley
- 2 tablespoons of grated parmesan cheese
- 2 tablespoons of plain yoghurt
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and chili powder and cook for 1 minute.
3. Add the chickpeas and maize and cook for 5 minutes, stirring occasionally.
4. Add the parsley, pepper, and parmesan cheese and cook for another 2 minutes.
5. Remove from heat and let cool for 5 minutes.
6. Spread the yoghurt on each tortilla wrap.
7. Divide the chickpea and maize mixture among the tortilla wraps.
8. Roll up the wraps and serve. Enjoy!
