Make Chickpea and Rice Pilaf
Chickpea and Rice Pilaf
Ingredients:
-1 cup uncooked white rice
-1 can chickpeas, drained and rinsed
-2 tablespoons olive oil
-1 small onion, diced
-2 cloves garlic, minced
-1 large tomato, diced
-2 cups vegetable broth
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the tomato, chickpeas, and rice and cook for another 2 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
6. Season with salt and pepper to taste.
7. Serve warm. Enjoy!
