Chickpea and Spinach Rice Bowl
Ingredients:
- 2 cups cooked white rice
- 1 can chickpeas, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine cooked rice, chickpeas, spinach, mozzarella, and olive oil. Season with salt and pepper to taste.
3. Transfer the mixture to a greased baking dish.
4. Bake for 25 minutes, or until the cheese is melted and bubbly.
5. Serve warm. Enjoy!
