Make Chickpea and Vegetable Stew
Chickpea and Vegetable Stew
Ingredients:
- 1 can of chickpeas
- 1 courgette, diced
- 1 small swede, diced
- 1 handful of kale, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 2 cups of vegetable broth
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and sauté for 3-4 minutes, until the onion is translucent.
3. Add the cumin, paprika, oregano, thyme, salt, and pepper and stir to combine.
4. Add the swede, courgette, and chickpeas and stir to combine.
5. Pour in the vegetable broth and bring to a boil.
6. Reduce the heat to low and simmer for 15-20 minutes, until the vegetables are tender.
7. Add the kale and simmer for an additional 5 minutes.
8. Serve hot with your favorite sides. Enjoy!
