Make Chickpea and Vegetable Stir-Fry

Recipe Name: Chickpea and Vegetable Stir-Fry

Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 head of broccoli, cut into florets
- 2 carrots, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of ginger, grated
- Salt and pepper to taste
- Olive oil for cooking

Instructions:
1. Heat some olive oil in a large skillet over medium heat.
2. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
3. Add the sliced carrots and broccoli florets to the skillet, stir-fry for about 5-7 minutes until slightly tender.
4. Add the drained chickpeas to the skillet and stir to combine with the vegetables.
5. Pour in the soy sauce and sesame oil, season with salt and pepper to taste.
6. Continue to cook for another 2-3 minutes, stirring occasionally.
7. Once everything is heated through and well combined, remove from heat.
8. Serve the chickpea and vegetable stir-fry hot, garnished with some sesame seeds if desired.
